Soak the plank in water then place uncooked food on the plank, and the plank on the barbecue. This method creates a wonderful smoky flavour whilst ensuring the food is cooked delicately.
Can be washed and reused. Use grill planks for both direct grilling or for indirect cooking (planks will last much longer).
Please note, when cooking with a plank and direct-heat, long and hot cooks will decrease the number of times the plank can be used. We cook dishes that take 15 – 25 minutes at 200°C and get dozens of uses from the planks, but if cooking for an hour at 250°C the plank may only last 1 or 2 cooks.
